Kitchen Hood Systems: NFPA 96 and 17A on a Six-Month Cycle

The wet-chemical system over your cooking line has more than one clock running:

Semiannual Inspection: NFPA 17A and NFPA 96 set a six-month inspection by a qualified technician, with a tag and report each time.
Fusible Links: The heat-sensing links that release the system are replaced on the same six-month visit in most kitchens.
Hood and Duct Cleaning: A separate NFPA 96 clock by cooking volume: monthly for solid fuel, quarterly for high-volume, semiannual for moderate, annual for low.
Long-Cycle Cylinder Work: Cylinder hydrostatic testing and agent recharge on multi-year cycles set by the standard and cylinder type.

What the Technician Does on the Visit

The technician verifies the system would discharge and stop the fire: nozzles aimed and capped, cylinders at pressure, the manual pull accessible, links replaced, and the gas or electric shutoff tripping on release. A hood system that discharges while the gas keeps flowing has not finished its job. The report records each item, and anything corrected is noted. If the system has been discharged since the last visit, the cylinders are recharged and the system returned to service before the kitchen reopens, since a hood with no agent is an impairment the fire marshal can shut a kitchen over. Work through the same visit is routine for our team, and the same tag goes on the system when it is done.

What Fails Inspection

Most failures are small and avoidable, and the same few repeat across kitchens. Anything that needs work goes to our suppression repair team.

Nozzles Do Not Match the Line: Kitchens rearrange fryers and griddles without telling anyone, and the nozzle layout no longer covers what is underneath. The most common failure.
Missing or Greased Nozzle Caps: Caps keep grease out of the nozzle. Missing or clogged caps fail the test.
Old Fusible Links or No Tag: Links past six months, or no current service tag on the system.
Shutoff Does Not Trip: The gas valve or electric shunt does not release when the system is activated.
Blocked Pull Station or Low Pressure: A pull station behind a rack, or a cylinder gauge out of range.
Grease in the Duct: Overdue cleaning is an NFPA 96 failure on its own, and a bigger fire load for the suppression system to face.

Fusible Links and Why They Are Replaced

A fusible link is a small heat-sensitive piece of metal that holds the system closed until the temperature at the hood reaches its rating. In a kitchen, grease and heat cycling age it, and a link that has stretched or gummed up may release late or not at all. That is why most kitchens replace links every six months on the same visit as the inspection, rather than testing them. Links are rated to match the appliance temperatures below, so a swap to a hotter-running fryer line can mean a different link, another reason to call before equipment changes.

Clean Agent Systems for Server Rooms and Records

Clean agent systems protect rooms where water would do more harm than fire: server rooms, telecom closets, and records storage. Under NFPA 2001 they are inspected twice a year, with the technician checking cylinder weight or pressure, the release circuit, the abort and manual pull, and the alarm tie-in. Room integrity matters too, since a leaky enclosure cannot hold the agent concentration. A new wall penetration or a door that no longer seals can fail the system even when every cylinder is full. Detection reports through your fire alarm system and is verified in the annual alarm test.

The Restaurant Reality

For restaurants, the hood inspection ties to more than the fire marshal. Insurers ask for the tag, some leases require proof, and a lapsed tag can come up during any health or fire visit. A single hood system inspection typically runs $150 to $400 per system, with fusible links usually included and replacement parts quoted separately. Restaurants and gas stations and grocery stores with food service carry the same rule, and your Class K extinguisher goes on the extinguisher inspection calendar.
